If you have a juicer like I do, it's even easier-- all you have to do is run a pair fresh cucumbers through the machine.
Store the juice in an air-tight glass jar (such as a mason or other clean canning jar). I've found that this will keep well in the fridge for about 2 weeks--and you can add a splash or two to your water as needed. (This cucumber juice also makes a great base for cocktails!)

How to make Guava Juice

Slicing and Dicing

Rinse off guavas.
Slice them up by cutting off the black parts at the end.
Cut up the guavas to fit in your blender.

Blend

Fill up the blender with cubed guavas. 4 medium size guavas seem to do the artificial.

Fill up the blender about 2" from the maximum with water.

Add sugar to taste. I used 1/4 of a cup the first time which was acceptable for me. Kid’s choice more sugar and seemed to like it a lot best if I used 1/2 cup.

Blend until it spreads a smooth consistency.

Strain

Set up the strainer over your bowl and pour the blended mixture in. The mixture is likely to clog the strainer very fast. In order to aid it through the strainer, stir with a wooden spoon. Virtually all of it goes through except the seeds and a tiny of the pulp.

Repeat for all the juice in the blender.

Other people have said me they just let the seeds settle and then skim but I think I'd have to create the mixture a tiny thinner.

A friend of ours provided us a magic bullet mixer, so Kenya decided he needed to try it out and do the cooking! First he had to prepare a juice for himself, then one for me and then, naturally, he needed to drink both of them! 

And that is the advantage to a lot of leftovers: at least I still had enough melon to prepare another one just for me!

Ingredients
  1. 1 Big Cantaloupe Melon
  2. 8 cups water
  3. 1 cup sugar or to taste. Add more if needed.
  4. 3 teaspoon Vanilla flavor extract.
  5. Ice (cubes or crushed)
How to make Melon Juice
  1. Slice the Cantaloupe in halves.
  2. Scrape the middle part (with seeds) of the cantaloupe with Spoon into a bowl then fixed sideways.
  3. Scrape Cantaloupe meat into a big bowl or jug with the melon scraper.
  4. Add water, sugar, vanilla, and ice.
  5. Remember the central part of the cantaloupe that you set aside? Transfer it to a sieve and squeeze the juice into the cantaloupe mix.
  6. This is the slice of the melon where you get the meditation of sweetness and flavor.

This simple Thai chicken soup has that classic Thai flavor - a stability of spicy, salty, sweet and sour. I think ours likes are pad Thai and Penang, but last night I felt like having soup. And not just some chicken and noodle soup. I wanted best flavors.

Plus, Karl is tasteless so I really needed to put some main flavors for him to basically be able to taste something….poor guy, he is not often sick but when he come to be it’s bad!

Anyways! Since we can’t pay for to actually go to Thailand just up till now, I thought this soup was a respectable different.

Ingredients:

  • 6 cups better-quality chicken stock
  • 1-2 chicken breasts, cut, OR 1-2 cups cooked chicken or turkey
  • 1 lemongrass stalk, OR 3 table spoon frozen ready lemongrass
  • 4 kaffir limes leaves
  • 1 cup shiitake mushrooms, slice
  • 1 thumb-size cut galangal or ginger, grated
  • 1-3 fresh red peppers, minced (to taste), OR extra 1/2 to 3/4 tea spoon dried crushed pepper
  • 1/2 to 1 can better-quality coconut milk
  • 2 table spoon lemon juice
  • 2+ table spoon fish sauce
  • 1 tea spoon brown sugar (optional)
  • handful fresh coriander leaves
  • handful fresh basil leaves
  • 3 spring (green) onions, cut
  • optional: other vegetables, similar sliced bell pepper or cherry tomatoes
  • Optional: wheat or rice noodles, if serving as the main course

How to make Thai Chicken Soup with Coconut Milk
  1. Slice and mince the lower serving of the lemongrass stalk. Keep the better stalk for the soup pot.
  2. Place chicken broth in a large soup pot over medium-best heat. If you have leftover chicken or turkey bones, add those too. Takings to a boil.
  3. Add fresh chicken and mushrooms. Also add the fixed lemongrass, and more kaffir lemon leaves and fresh pepper. Boil 8-10 minutes, or until chicken is prepared.
  4. Drive heat down to medium. Add the galangal or ginger, 1/2 can coconut milk, the fish sauce, and added vegetables. Mixture well. Boil gently 2-3 minutes.
  5. Go heat down to lowest. Add lemon juice and mixing.
  6. Do tastes test? Look for symmetry between spicy, sour, salty, and sweet flavors. Start with salt, adding more fish sauce if not salt or flavorful enough. If too acid, add the sugar plus a little more if you need it. If too spicy, or if you'd like it softer, add more coconut milk. If not spicy sufficient, add more pepper.
  7. Ladle soup into serving bowls. Sprinkle a little fresh coriander, basil, and spiral onion over each bowl. ENJOY!
