Stir fried tomato is a perfect side recipe for Chapathi. It is not at all spicy because not many spices are added and has the pungent taste of tomato so it can be used as bread spread. It is one of my favorite recipes since this was my successful cooking venture after I started remaining away from. When I started at work in Maldives, i had a tough time for management my three meals. During those days, hotels never served breakfast and bread was the only confidence for.
I was sad of taking bread frequently in different shapes for breakfast choice triangle, square, rectangle, circle, etc. I very thought of home prepared idly, puttu, dosa, etc made me so desperate and obvious to have a change in my food and i was required to try my hands on cooking something, but what? Never knew what are the ingredients to be added for curries but my room mate directed me with her slight knowledge in cooking. There started my cooking and since then i tried to bring about all my three meals on daily basis.
Very easy prepare of making Tomato fry, it is more helpful for single man and a very good side recipe for chapathis and roties.
This is a very easy to make and well excellent recipe. It’s a hot favorite among working ladies due to the easiness in preparation plus the information that it goes well with dosa, rice, bread and the fact that it tastes great!
Per serving: 69 calories; 3 g fat ( 1 g sat , 2 g mono ); 4 mg cholesterol; 8 g carbohydrates; 0.5 g added sugars; 3 g protein; 2 g fiber; 640 mg sodium; 420 mg potassium.
Ingredients
- 2 big tomato, diced
- 2 big onion, chopped
- 4 flakes garlic (Chinese), chopped
- 2 green pepper, slit and halved
- Few curry leaves
- 1 table spoon oil
- 1/8 tea spoon mustard
- Turmeric powder – a pinch
- 2 tea spoon coriander powder
- 2 tea spoon pepper powder (preferably Kashmiri chilly powder)
- Salt to taste
How to make Tomato Fry
- Heat oil in a non-stick pan and splutter mustard.
- Add curry leaves, green pepper, garlic and sauté until its raw smell disappears.
- Add onion with a pinch of salt and turmeric powder, cook for 3 minuets over medium blaze.
- Stir in coriander powder and pepper powder, fry up to its raw smell disappears.
- Add tomato and mixture well, stir fry for 2 minuets.
- Cover and cook until tomato is done fine (not so mushy)
- Remove from cooker and leave the lid half covered.
Now tomato fry is ready and serve it with roti or bread.
Note: I never tried to add garam masala or ginger to this because i don’t like it that way.
