I have been greatly afraid of making this sauce since always. (Not afraid of eating it mind you, I've never met eggs benedict I didn't choice, or eat.) To overcome this fright I asked my friend Hunk to show me how to make Hollandaise Sauce Recipe. Hunk's hollandaise didn't different, and he didn't oath (any more than normal), but the work! The beads of perspire forming on this man's forehead as he whipped those egg yolks and butter into submission. I was dreading the effort. Hunk has arms of steel. I have arms of, a young, flexible sapling? Whatever. Not steel.
The solution? Food processor hollandaise. It's easy! Even I can do it. Which means even you can do it. So I encourage you to effort it, if you choice me have been intimidated by the concept of attempting this sauce. Use it over fish, steamed vegetables like broccoli or asparagus, or ahead of poached eggs, bacon, and English muffins.

Ingredients

  • 1 cup clarified butter (about 2½ sticks before clarifying)
  • 4 egg yolks
  • 2 table spoons lemon juice (the juice from 1 small lemon)
  • 1 table spoon cold water
  • Kosher salt, to taste
  • Cayenne pepper (or a dash of Tabasco sauce), to taste

How to make Hollandaise sauce recipe

  1. Heat a move slowly or two of water in a saucepan over a medium heat. Also, your clarified butter should be dry, but not hot.
  2. Combine the egg yolks and the cold water in a glass or stainless steel bowl (not aluminum) beater for a minute or two, until the mixture is bright and foamy. Whisk in a pair of drops of lemon juice, too.
  3. The water in the saucepan should have begun to simmer. Keep the bowl straight atop the saucepan of simmering water. The water himself should not come in contact with the bottom of the bowl. Beater the eggs for a minute or two, until they're slightly thickened.
  4. Take away the bowl from the heat and begin adding the liquid butter slowly at first, a few drops at a time, while whisking continually. If you add it too fast, the emulsion will break.
  5. Continue beating in the liquid butter. As the sauce thickens, you can slowly increase the rate at which you add it, but at first, slower is best.
  6. Next you've added all the butter, whisk in the remaining lemon juice and season to taste with kosher salt and cayenne pepper (or a dash of Tabasco sauce). The ended hollandaise sauce will have a flat, firm consistency. If it's too thick, you can adjust the constancy by whisking in a few drops of warm water.
  7. It's better to serve hollandaise right away. You can wait it for about an hour or so, provided you hold it warm. After two hours, although, you should toss it — both for quality and safety reasons.

The roasting process distillates the Tomato flavor retaining the natural sweetness of fresh tomatoes. Although the roasting takes around an hour you can use this time to make the remaining ingredients and reduce in between. The Tomato Soup can be roasting made in advance and reheated, but reheat a little and don’t let the soup boil which would spoil the taste.

• 1 carrot, peeled and coarsely grated
• a handful of fresh basil, leaves picked, stalks finely chopped

• 6 tablespoons double cream
• 1 teaspoon red wine vinegar
• 2 egg yolks
• 1kg super-ripe tomatoes
• 1.1 liters chicken or vegetable stock
 
*   Sea salt and freshly ground black pepper

How to make Tomato Soup


I have made all sorts of separate tomato soups over the years and this is possibly one of the simplest and tastiest. Here’s the artificial, if you go down to your local marketplace at the end of the day you may find they marketing off tomatoes cheap. More than possibly the seller thinks they are over-ripe, but they are more likely just perfect and will prepare greet soup. If you can’t get these, buy tomatoes two or three days before you must them, but don’t keep them in the fridge as they won’t season. Leave them on a ledge to get rope. If there’s like then have a taste- you’ll be amazed how different they can be, so take the ones that taste the best. The second trick is the unhurried cooking, which makes them very sweet. Best served in warm bowls or mugs at the table with some actually fresh bread.
 
Put your onion, garlic, carrot and basil stalks into a big pot with a pair of lugs of olive oil. Cover the pan, and simmer lightly without coloring for 20 minutes, stirring every pair of minutes. Whisk together the cream, vinegar and egg yolks in a small bowl and set to one side. While the vegetable are simmering, drop the tomatoes into decoction water for 30 seconds, then remove the skins and unevenly chop the flesh. Add these to the vegetable, then pour in the stock and simmer for a more 20 minutes with the lid on. At this point its fine to purée the soup using a food processor, a liquidizer or a hand-held blender, but be careful as it will be hot. Once you've mashed the soup, put it back into the pan; take it back to a simmer and term very carefully with salt and freshly ground black pepper.

Just before serving, to improve the soup and give it a shine and silky texture, whisk in the cream combination (don’t re-boil it after adding the egg yolks or it will ascent) and serve traditional away, sprinkled with a few torn-up basil leaves, if you choice.

This beer marinated and grilled shrimp are my all time favorite, most tasty shrimp to eat.  They are better served warm or at room temperature.  They are so worthy that your guests will gobble them active before they get cold.

Even if you are not a tipple lover I promise you will enjoy these tasty bites.  Just think of cooking with beer as you would after using wine to cook with.  It informs a delicious flavor to the shrimp and makes these shrimp very juicy and desirable.

Although the original recipe suggests to only steeping the shrimp for a few hours, I marinate mine for about 11-16 hours.  Overkill?  Maybe.  But I just love the flavors the sauce gives to the shrimp.

I’m beautiful certain I could easily change to a vegetarian lifestyle if it weren’t for two things: bacon and shrimp. In my opinion, bacon is excellent. On it’s own it’s magnificent, but it is also has the ability of transforming many a mundane recipe into something fantastic. When it comes to shrimp – whether they’re sautéed, fried, satiated or grilled – they best my list of favorite foods. Unless you try to feed them to me in shrimp mixture form. Then all bets are off. Just something about the ice cold shrimp and cocktail sauce skeeves me out.

I stumbled on this grilled shrimp recipe a few years ago and it’s been one of my go-to weeknight meals since then. We grill year round at our house. (Yep, we’re the crazy people sporting Ugg boots and winter coats with our grilling tongs in mitten-clad hands out the middle of a snow storm, all just to get our steak and shrimp fix.)

The preparation of this shrimp dish is super simple – I just toss everything into a zip-top bag and let it marinate in the fridge for about 30 minutes. The shrimp grill up in minutes and are complete of flavor. They couples perfectly with grilled asparagus and steamed rice.

Ingredients

1.      3 cloves garlic, minced
2.      1/3 cup olive oil
3.      1/4 cup tomato sauce
4.      2 table spoons red wine vinegar
5.      2 table spoons chopped fresh basil
6.      1/2 tea spoon salt
7.      Freshly cracked pepper, to taste
8.      1/4 tea spoon cayenne pepper
9.      2 pounds fresh shrimp, peeled and deveined

How make to Marinated Grilled Shrimp

In a big bowl, combine all ingredients excluding the shrimp and whish until combined. Add shrimp to the bowl, and stir until consistently coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring a pair of times.

Heat grill for medium warmth. Thread shrimp onto skewers, piercing once near the tail and once neat the head. Throw away leftover marinade. Lightly oil grill grate. Cook shrimp on heated grill for 2 to 3 minutes per side, or until cooked through and impervious.

I’ll be just with you, I never order shrimp cocktail at a restaurant. Why? Because almost continually the shrimp is too cold, the sauce is jarred and the recipe is way overpriced.

But for some reason, a twosome of weeks ago while on a trip to Ashe-ville, North Carolina, I was controlled. It might have been the shock of the fresh mount air.

With the server hovering over me, my finger stopped at the “Jumbo Shrimp Cocktail with Fresh Homemade Cocktail Sauce.”

The finger paused slight too long at the word “Sauce” and she took it as a sign of my order and zoomed off to make it occur.

When it arrived, I was still brooding but then I saw the plate. It wasn’t just a commis chef reaching into a bag of store-bought, pre-cooked tough shrimp and glopping a spoonful of jarred sauce. It really was the real-deal. If you create a “C” with your forefinger and thumb, that’s how big the shrimp were. The tasty, spicy sauce was a house-recipe. Instead of just baking the shrimp in plain water, the spices in their dish really make the big difference between insipid shrimp that serves as a carrier for the cocktail sauce and a shrimp cocktail with layers upon layers of flavors in every taste.

If you are using ice-covered shrimp, the safest way to melt them is in a bowl of ice water in the refrigerator. I like to buy tail-on, shell-on, deveined shrimp. Of course, use what you can find at the bazaars.

Ingredients


For the shrimp:
  • 2 tablespoons Old Bay Seasoning
  • 1 lemon, halved
  • 1 teaspoon granulated garlic
  • 1 clove garlic, finely minced
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 24 extra large tail-on raw shrimp (more if you are using smaller shrimp)
For the cocktail sauce:
  • 1/2 cup Heinz pepper sauce*
  • 1 cup ketchup
  • 1 tablespoon horseradish
  • 1 dash Worcestershire sauce
  • 1/2 lemon Juice  
  • 1/2 teaspoon Tabasco
  • 1/2 clove garlic, finely minced
  • 1 tablespoon cilantro, chopped


·         The chef specifically recommends Heinz peppersauce- it’s not very spicy and has a lovely sweet taste. If you use other type of hot pepper sauce, just starts with a pair table spoons first, then taste and adjust.

 How to make Cocktail Shrimp

 

1.       To make the cocktail sauce, mixture all the cocktail sauce ingredients together in a medium bowl and refrigerate until ready to distribute.
2.       Have a big bowl of ice water ready and set nearby the sink. To an 8-quart jar of water, add the Old Bay, lemon, granulated garlic, garlic, pepper powder, and salt. Take to a boil. Add the shrimp to the pot and when the water takings to a boil, the shrimp should be done! The shrimp should be lively pink.
3.       Directly drain and place the shrimp into the ice bath to cool for 2 minutes. Peel the shrimp (leaving the tail-on.) Drain and serve with the cocktail sauce.

I lived in Bangladesh for a couple of years. At the time, I steered clear of multi-cuisine hotels. In fact, I probably yet do. Any place that serves Indian, Chinese and Mainland probably is a jack of all and master of none. But this place was different. It was called 36 Festivity Hills because it was located on the popular Road No. 36 of Festivity Hills. A mere five roads away from where I lived, it was one of the few best restaurants close to Hi-tech City in those days. So, some of our office lunches were organized there. Their north Indian recipes were superb, but the two menus that stood out were the Vegetable Biryani and the Lemon Coriander Soup.
I found a best recipe for the Lemon Coriander Soup in a Tarla Dalal book. That dish calls for Lemon Grass and I didn't have any. (I used up whatever I had for my kasha to help my cold.) The soup at 36 Festivity Hills had freshly squeezed lime juice and that is what I did yesterday. I wanted a satisfying soup that would soothe my throat.
The vegetables I used were baby corn, mushrooms and bell peppers as well as a carrot - they loan a lot of flavor to soup. The one thing different from my typical method was that I used a table spoon of Better than Bouillon Onion Gravy concentrate in addition to the sauces and it provided a nice, brown color to the soup as well as thickening it a little. A stock chop or just home made stock will work great as well. I couldn't avoid my favorite "gondhoraj" lemon leaf either - the flavor it imparts is just fabulous. I put in a bunch of coriander into the soup when it was cooking and it was just perfect.
Ingredients
1 Carrot, thinly sliced
8-10 French beans, thinly sliced
2 table spoon Cabbage, finely chopped
3 Button Mushrooms, sliced
3 Spring Onions, leaves chopped and bulb sliced
3 Broccoli florets, sliced
1 tea spoon Soy Sauce
1/2 tea spoon Green pepper Sauce
1/4 tea spoon Ginger Paste
1 tea spoon Garlic, finely sliced
2 table spoon Coriander leaves, finely chopped
Salt to taste
1 tea spoon Oil
1 table spoon Lemon Juice
How to make Vegetable Lemon Coriander Soup
Heat the oil in a pot. Add the spring onion whites and fry for a minute. Add the ginger and garlic and fry for a few minutes. Add the vegetables with the spring onion greens and sauté for a minute or two. Add the soy and pepper sauces along with the salt. Add 4 cups of water and take the mixture to a boil. Simmer for 12 minutes or until the vegetables are cooked. Take off the flame and stir in the lemon juice.

I really enjoyed this soup and will make it even when I get best. Try it; I'm sure you'll love it too.
